Proteases should breakdown proteins of food, but not the walls of the digestive tract. If they were produced in the active form, they could digest the cells, which make them, as well as other cells in the lining of the digestive system. Secretion of inactive forms of proteases allows for the avoidance of this problem. They will be activated only on the income of food, which should be digested.
