How does dyeing the hair influence the genes for hair color?

Dyeing has no effect on the genes themself. Rather, the dye "hides" or "masks" the effects of the genes responsible for hair coloring. This is why one cannot permanently color ones' hair - when the dye is washed out or new hair grows the color reverts to the original one.
