The purpose of twisting two cables as shown above is to improve on electromagnetic compatibility. This means that the crosstalk effects and electromagnetic radiation is reduced.
The idea behind this twisting is to make sure that the two wires are as close as possible to each other hence they have the same distance from the interfering source. this will make the noise or interference to produce a common mode signal which can be easily identified at the receiver's end and cancelled.
