Why is the sound louder and "rolling" in an empty hall rather than in the hall, filled with the audience?

The human body absorbs sound waves. So when there are many people in the room, there are essentially different conditions of sound spread: its reflection or reverberation (reverbation - the process of gradually reducing the intensity of sound at its multiple reflections) greatly reduces.
