Ways to achieve smooth lump free sauce:
1.Sifting/whisking- lumps can form if you don't sift the flour. If a recipe doesn't call for sifting the flour, use a wire whisk to whisk the flour. Flour settles when it's stored thus forming lumps when mixed with liquid, and sifting or whisking it aerates it. The whisking should be vigorous and in circular motion
2.Blending- blending can easily smoothen a lumpy sauce. One should pour the sauce into a blender or food processor and either whip on a blender or most commonly, use the spinning of the blades to fix lumpy gravy. A blender is advantageous for lump free sauce as it also allows the flour to absorb some of the liquid and gluten formed during mixing.
3.Deglazing- deglazing the pan in which you are making the sauce avoids flour lamps in sauce. One should deglaze by first adding flour into the sauce pan and slightly browning it. When the pan is hot enough, one should add in the liquid of their choice, essentially cold liquid. The sauce stays silky and smooth.
