Can you advise me? I am about to use Aluminium brackets to support a stainless steel sink outside in the back garden. What is the Galvanic (Voltaic) electrical potential between Aluminium abd 316 stainless steel? Should I put a plastic barrier between them?

No, you don’t need it when aluminum is airborne it oxidizes and does not react to any elements
