In the process of vinification tartaric acid is accumulated as a side product. It can be preserved within the terebinth resin in clay jars. Presence of tractaric acid in the ancient jars makes evidence of vinification. This method provided evidense of vinification 7 millenia BC. With the development of specific tools used during wine production it became possible to use them as evidence.
