Question #101324

When eating breakfast meal that consists of eggs ,honey and some pastries, what do you expect to be digested first in the mouth

Expert's answer

Pastries will be digested in the mouth. Pastries are made of grains that contain starch. Starch is a polysaccharide (complex carbohydrate) that is digested by amylase produced by salivary glands. As a result, salivary amylase will digest starch in the mouth, whereas other components will be digested in other organs of the digestive tract. For example, proteases will digest egg proteins in the stomach and duodenum, egg lipids will be digested by lipase in the duodenum and small intestine, whereas honey glucose and fructose will be absorbed without digestion.
