Why is salt added in excess to pickles?

High concentration of salt creates the hypertonic solution, which is not favorable for reproduction of bacteria. Only limited number of species can survive under salt concentrations higher than 10%. Thus, salt in pickles works for their preservation via inhibition of reproduction of microorganisms.
