Why does food in a plastic lunchbox delays to get cold compared to the one in an enamel lunchbox

Because the thermal conductivity of enamel is smaller than that of plastic, so for the hot air inside the box it's easier (and faster) to give out thermal energy in terms of heat through enamel walls.
