This process is known as crystallization. Crystallization separates a pure substance from a liquid phase. It can be performed by cooling the solution or lowering the solubility by other means making the pure product to form crystals.
Crystals are usually very pure because of its solid nature and well-organized lattice structure impermeable to impurities. However, in some cases, the impurities (including the solvent itself) can incorporate into the solid structure.
