When onion or garlic is cut down to small pieces, chemical precursors are released and chemical reaction start. This leads to quick souring of food, especially at high temperature. To prevent rotten onion, garlic or ginger paste we can use salt(NaCl) in mixture with oil wich will serve as a preservative agents.
