We are currently on complexation and we had an experiment in which a teaspoon of our supernatant of vinegar and steel scrubber solution was mixed with a diluted citrus juice. The question is that why did the change in color occur or what's the reason for the change in color from pale yellow/orange to a darker shade?
due to chemical reactions such as caramelization, ascorbic acid degradation and the Maillard reaction.
