Carvone is used as an aromatic substance and flavoring agent in liquors, toothpaste, food aromatic essences, chewing gum, perfume products, it is used as an inhibitor of potato sprouting, antimicrobial and antifungal. Carvone is available inexpensively in both enantiomerically pure forms, which makes it an attractive starting material for asymmetric general synthesis from natural products.
