if I were to evaporate the filtered solution (NaCl) to dryness would I be left with only solid NaCl?

You will be left with solid NaCl after evaporating the filtered solution NaCl. This salt crystallise without water as it has a very stable cubic crystal structure. Besides, there is no opportunity to form double salts because calcium carbonate is not soluble in water solution at all.
