Eggs has two proteins namely globulin and keratin. A toxic chemical namely hydrogen sulphide is released when globulin begins to decay. The hydrogen sulphide has potent sulfur smell. Keratin also has very high levels of an amino acid called cysteine, which is full of sulfur atoms.
