Microorganisms are used widely used in the preparation of various drinks and foods. The purpose of the microorganisms in the process include:
- fermentation. This is a processing of food components with the production of specific taste, flavor, and consistency of multiple foods (i.e., cheese and dairy products).
- production of ethanol (a form of fermentation). The process is associated with the production of alcohol beverages (i.e., wine)
- preservation. Microorganisms produce specific acids and other compounds inhibiting the growth of pathogenic microbes.
- nutrition. Microorganisms increase the nutritional value of foods as they produce vitamins.
