Both monocot and dicot seed store food in the endosperm. However, non-endospermic seeds store food in the cotyledon and therefore the cotyledon is thick. Hence, the main reason some seeds have a thin papery cotyledon is because they do not store food in the cotyledon but store in the endosperm.
