vehicles will disable their engine. Sugar is mostly carbon and it burns readily, explain why it
causes a problem on a molecular level.

Sugar is insoluble in gasoline. Therefore, once appeared in the engine, sugar granules just accumulate there causing and chocking it. And when sugar enters fuel injector, it plugs it preventing fuel flow.
