Polyunsaturated fatty acid oxidation generates low levels or desirable flavourful carbonyl compounds while odd number chain fatty acid oxidation produces propionyl CoA and acetyl CoA.

In addition to that polyunsaturated fatty acid oxidation, temperature and light are the major factors involved but in odd number chain fatty acids oxidation, temperature and light are not major factors.
