Cellobiose has two molecules of glucose that are linked by a β(1,4)\beta-(1,4') glycosidic bond. It therefore undergoes mutarotation due to a aglycone which is hemiacetal. Cellobiose has eight free alcohol (OH)(OH) groups, one acetal linkage and one hemiacetal linkage, which give rise to strong inter- and intramolecular hydrogen bonds. Cellobiose therefore produces 62kJ/mole-62kJ/mole of energy.
